Space between the stars is not totally empty. There are clouds made from gas and dust.
Some of the gasses are denser which causes a gravitational force that pulls the gas molecules closer together.
As the molecules continue to gather together the gravitational pull gets even stronger.
The force on the matter becomes so intense that it collapses on itself. The stuff in the centre compresses an heats up.
The temperature gets so high it starts nuclear fusion.
All the molecules that have fallen into the centre evolve into a bright shining star.
