In the Paleolithic time, they hunted by following herds of of wild animals
In the Neolithic time, they grew crops such as wheat, corn, and other foods
In Paleolithic time, they lived in caves and never stayed in one place for too long. These temporary homes were necessary because they were a small group of hunters and gatherers and so they had to follow their food.
In Neolithic time there formed communities of a bunch of houses built together. These houses were a lot safer.
In Paleolithic age, they had to specialize in hunting because that was the main struggle. They didn't have time to learn other skills and they didn't even learn other skills.
In Neolithic time, they had a stable food supply and a community, so they were able to specialize in other skills like pottery, toolmakers, and traders.
In Paleolithic time before they used to trade, their groups were restricted to only the resources in their tribes area. So if it wasn't in their tribes area, they couldn't have it.
Overall, there was many evolution differences between the two Ages. The advancements created the beginnings of civilizations love today.
