In this scene George and Lennie are talking about saving up money and owning a farm one day. Their dream symbolizes the American dream and it represents how average people want the American dream.
In the next scene Candy's dog gets shot by Carlson and he said to Candy that he should've shot the dog himself. Candy's dogs death represents Lennie's death because Candy and his dog are foils of George and Lennie.
