Say you have a pot of ice, it's molecules are together and don't move at all.
If I put it on the burner it'll melt the ice spreading the molecules out, speeding them up and creating a liquid.
After the ice melted we got water.
Now I'm boiling the water at a high temperature so it evaporates
Now I have a pot of... nothing cause what should be in the pot is all around us.
Let me explain, air is a type of gas just like steam and oxygen. A gas' molecules are extremely spread out and move so fast.
That's pretty much it sure it's a waste of water, but that's science.
