When all the animals die, they sink under the ground. Under the ground they are subject to a lot of pressure and heat. This causes them to rot and form natural gasses. Often this happens in peat bogs.
Meanwhile, in the sea a process close to this happens. The remains of fish sink to the seabed and eventually water buries them and they transform into crude oil.
When the plants die out the plants material is left behind, this material builds up with pressure and ends up under the ground. And similar to the others it is compressed so much that it turns into coal.
