  • First you need to get all the equipment and ingredients which are as well as health and safety
  • Ingredients: 150g of Digestive Biscuits 75g of butter or margarine 225g of cream cheese 125g of fresh thick double cream 50g of caster sugar and any decorations

  • 3. Remove from the heat/oven and stir in the biscuit crumbs. Use this to line the base of the tin you have chosen to bake it in.
  • 2. Put the butter into the pan and melt at or over a medium temperature until completely melted.
  • 1. Put the biscuits into polythene bags then crush them with a rolling pin.
  • 5. Wash the lemon/lime/orange. Then grate/zest the skin and cut the fruit in half ready to be juiced.
  • 4. Place in a cold place (fridge) to let it firm while making the filling.
  • 7. Beat the cheese until smooth and carefully stir in the cream. Fold in the sugar and zest. Mix until smooth.
  • 6. Squeeze against the juicer to extract all of the juice inside the fruit then do the exact same for the other half unless you are using an orange if so you will only use half of the orange.
  • Make sure that the cream as well as the cheese are both kept in the fridge as well as in sell by date. Make sure you make sure the fruit must be washed thoroughly. Wash hands, wear an apron and tie back long hair.

  • 8. pour and spread the mixture smoothly and evenly over the crumbs. Use a pallet knife or the back of a spoon to give it a nice smooth finish.
  • 11. when you are ready to eat take out of the fridge cut it up, serve with some cream or custard and enjoy!! :)
  • 10. When you have finished and are not eating straight away you must put it in the fridge at 5*C.
