They have surfactants, which loosen hard residue, disperse in water, and hold soils in place so that they can be rinsed away. Surfactants also have alkalinity, which is what neutralizes the acids in the soap so that the product can clean dishes instead of dissolving their ceramic or plastic.
Ok, it's great that it won't dissolve my plate away, but how do I know the stains will come out?
