  • Bakers use yeast to produce carbon dioxide which gives bread or cake a rise and a fluffy texture.
  • Starch in the flour and sugar used for baking is food for yeast cells.
  • In a documentary I saw that Carbon dioxide given out by yeast cells during respiration is trapped in dough as tiny bubbles.
  • When dough is baked, gas bubbles expand and the dough rises.
  • And that is a bread making process.
