First, there is an overpopulation of mice. This means that there are too many mice and not enough resources. In order for the population to decrease, some mice will not survive. Then, the mice have to compete for resources, such as food. Some mice aren't able to find enough food and die off. This may be due to a genetic trait, or they just weren't fast enough.
The eagles eat the white mice because their skin color doesn't blend in with the brown dirt. But, the brown mice are able to survive because of their brown fur.
Overtime, the mice reproduce and pass their survival trait down to their off spring. Since they were best adapted to the environment they survived, this is called survival of the fittest. The one white mouse was able to survive and will reproduce with the brown mouse, and their offspring will most likely have brown fur because its the dominant trait.
Some mice, like the black one, have genetic mutations that can be either good, bad, or neutral. In the black mouses case, it is a harmful mutation because he doesn't blend into the brown background.
It takes a while, but after a few decades a whole species can change in order to survive in its environment. This is called evolution. The brown and white mouse species adapted better to their environment and now the whole population is able to survive based on fur color.
