They use the energy from the food to be able to move through the water, which is mechanical energy.
The person keeps potential energy in their core, and legs when not moving as they're gliding through the water.
The person causes thermal energy from causing a lot of motion, warming them up from exercise.
The person is also creating sound energy from movement.
After they are done swimming, they go back home and sleep and eat to gain energy to be able to do it again the next day.
