Odysseus and his men stabbed Polyphemus' eye. As he was being in pain and yelling who stabbed him, Odysseus was smart and said that his name was Nohbdy.
Since they stabbed Polyphemus' eye, Odysseus and his men figured they could hide under the sheeps to escape his cave.
