  • 1. Arthropod VS Crustacean
  • I guess lobsters kind of look like weird insects
  • Lobsters are weird looking but I still eat them!
  • The lesson starts with an introduction from the professor explaining the short and long term goals of the project. Over several classes students will work in groups to develop a deeper understanding of the attitudes around food from edible insects (FFEI) in our culture and different ways to shift these attitudes in order to be more in favour of sustainability and good health.
  • We try to package them so they look less intimidating so people are more willing to purchase the product.
  • Who are your biggest buyers?
  • The first activity is a game of interactive FFEI BINGO. Students are given a sheet with different insects and insect dishes on it. As they are called out they check off ones they have eaten (not many will check them off). After they will open a short discussion that allows learners to hear what food their peers have tried, whether they liked it, or how they reacted, and to observe similarities and differences in the room. During round two, students check off what they would be willing to try after hearing peer stories.

  • Other teams are promoting crustaceans. Lets brainstorm use of language and images to try and shift people's attitudes showing that insects can be as delicious as lobster!
  • The previous reflection and activity will lead into a discussion comparing and contrasting arthropods and crustaceans. This activity is an open ended discussion among small groups of students, in which they share out key insights with the class. They are to use personal experiences, the internet, even scholarly articles. This allows learners to close the gap between attitudes, views, and stereotypes towards  FFEI and food from crustaceans (FFC). The instructor will encourage students to ask questions and reflect on what they know.
  • Students will travel to a manufacturer, restaurant, or other business that deals with FFEI. This gives them the opportunity to see the business side of FFEI and ask questions to the owners / managers to gain a deeper understanding of who eats insects and where they are being sent. The organization of this trip will depend on the availability of a business to travel to within the community, therefore this day is considered optional in the teaching plan.
