In this scene, God is making a new covenant with the people of Isreal. It will be different than the ones their ancestors had. God wants them to know that he is their God and in return he will help them.

The cup of proclamation symbolizes what God has done for them. The cup of blessing symbolized the point at which they begin to eat the actual Passover meal. The cup of consumation is drank when they start singing hyms after the meal.

The last supper is a passover meal, where Jesus goes through the 4 cups and the story. The tells them that the bread and the wine are his body and blood. He is making a new covenant. He ie is equating himself as the sacrafice or the lamb.
Take and eat; this is my body.
Jesus is asking for his father to send him a sign. this sign would be the cup to be thrown from his hands. He does not want to be crucified but will do it as God wills.
My Father, if it is possible, let this chalice pass from me; nevertheless, not as I will, but as you will.
Jesus is given vinager made from wine because he is thirsty. After he says,"It is done". This is referring to the passover meal. He has sacraficed himself as the lamb from the old passover. He establishes a new passover through his death.
In this passage, Saint Paul acknowledges Jesus has replaced the new with the old. He is the new passover lamb. He sacraficed himself and was the lamb and creadted a new passover. It symbolized a new thanksgiving.
