In this scene, the giver is explaining to Jonas who he is and telling Jonas what his job is. Jonas learns that he will have to keep all these memories and can't tell anyone about them. He learns about colors, love, happiness and pain. The giver tells Jonas to call him the Giver b/c he is giving Jonas the memories. The first memory that Jonas received was the memory of snow and a sled ride.
The scene has color because now Jonas is able to see color. In this scene it is when Jonas accidentally gives Gabe a memory of a bright, breezy day on a clear turquoise lake, and above him the white sail of the boat billowing as he moved along in the brisk wind.
In this scene Jonas and Gabe are traveling and have to hide from planes and helicopters. When they hide Jonas thinks about and gives Gabe cold memories to make their body temperature stay cool and so the body heat detector does not go off and they don't get caught.
