Chuck-wagons were originally used for cattle drivers because they needed a way to transport food and supplies. Back then there was no reliable small transportation that could go over rough terrain, but with chuck-wagons they were not only small but capable to carry supplies and go over rough terrain without being a massive burden and problem to the cattle drivers.
Fun Fact :Currently, food trucks cost 50,000 to 200,000 dollars to own one. Now if you want to rent a food truck, it will cost 100 to 1000 dollars a day.
The chuck wagon eventually evolved into the pushcarts which allowed for it to be used in more urban areas. The push cart purpose was not fully understood, but it's main use was to supply nourishing food to workers.

After automobiles were used widespread across the US, food trucks were later invented to replace pushcarts and to have the ability to be mobile, serve hot food, and cheap food.
