Fortunato keeps on saying his cough isn't going to kill him, and Montresor is saying he is loved and has good health and agrees with him. In reality Fortunato actually knows that his cough won't kill him because he has other plans.

The guards will always do the exact opposite of what they are told and it seems like Montresor obviously knows, so he tells the guards to stay in the house just so that they end up leaving.

Fortunato thought he was safe and was just getting wine the whole time, what we knew that he did not was that he was going to be killed by Montresor.

when Montresor said to Fortunato true, true in the book it foreshadowed that he knew it was not going to kill him. He knew this beause Montresor was going to do it himself
When Fortunato explains to Montresor that he never had an engagement this is foreshadowing Fortunato's fate. We as readers already know Montresor hates him and is most likely looking for some mischievous way to kill him without being seen
Fortunato is dressed up like some sort of joker/jester./ This foreshadows what the rest of the story looks like. Fortunato becoming a fool and more drunk as we go and becoming more vulnerable and pathetic.
