Maple Street is informed a month in advance of the upcoming month's menu. Today is Sunday and they must order the ingredients needed to make the mac n cheese by today so that the ingredients can arrive by Tuesday and made and served by Wednesday.
Wednesday Menu: Mac n Cheese
The location manager of Maple Street Commons, Whitney Clay goes into the Food System to see the data from the last time they served mac n cheese. The system shows that last time they only used 5 trays of mac n cheese when they expected to use 9 and ended up having to throw away two of the trays they could not even use the next day. So, Whitney only orders 7 this time.
The Food Service Management System is smart enough to know how much of each ingredient is needed to make a recipe large enough for 9 trays of make in cheese. After every dining hall puts their forecast of how many trays of mac n cheese are needed they will need to make into the system, Laurie Sampson manager of procurement and food production contacts MU's various food vendors. In the case of the mac n cheese, US Foods and Reiter Diary are being utilized.
US Foods Primary Food Vendor is located in Cincinnati. Reiter Day Farm and headquarters is located in Springfield, Ohio. Once they prepare the orders they are sent on a truck and delivered to Miami on Tuesday.
Reiter Dairy's headqarters are located in Springfield, OH. They are notified of Miami's list of ingredient needs and get a trunkful of their ingredients ready for send out on Tuesday.
