The gas molecules that were once moving around freely and colliding now become more loosely compact because they get colder. As a liquid, the molecules are nw flowing around together.
What Mike is seeing is evaporation evaporation is when the heat causes density rises and form a gas out of the liquid

the reason ell's ice freezes is because her refrigerator is set to specific temp. that is going to look the molecules the the liquide and make them a solid.
