Input levels is the of substances entering the body and output is the amount exiting.

We have to take measure of these to see how much food and water you are in taking to make sure you are properly fed and not dehydrated also we have to take measure if and when you are urinating or having emesis (throwing up).
Measuring input and output is important too see how you are recovering after your surgery. We have to see if your bowels are active and functioning properly and whether or not your body is absorbing all the necessary nutrients you need.
I realize it is important to maintain good levels but what if I don’t feel like eating or drinking that day?

I totally understand that but we encourage you to take all your necessary intakes to make sure you are recovering as best as you can and too make sure you don’t get dehydrated which could lead to more complications.
