So, when the chocolate is heated up, the particles gain energy and will start to vibrate faster and faster. With more heat, it provides the particles with some more energy until the particles loosen up and will freely move around past one another.
This is when the chocolate turns into a liquid (liquid chocolate). The particles are still the same, but they just have more energy in them. The temperature where something melts is called its 'Melting Point'.
