  • TRINITY: Each of these has a separate scooper so make sure you're using the appropriate one to prevent cross-contamination. The scoop itself should be lightly over the rim of the scooper, not too overflowing and absolutely not under the rim. You try Stacy. Pick 2 proteins for your bowl.

  • TRINITY: Always keep in mind that we want the customers to get the quality and quantity that they are paying for.

  • TRINITY: After the proteins, we add the sauce. We have 10 sauces, 9 house-made which include spicy mayo, spicy aioli, creamy goma, creamy wasabi, lemon yuzu, citrus ponzu, sweet Hawaiian, sesame shoyu, ponzu vinaigrette, and the only one that is not house made is the eel sauce. The sauce should not drown the fish but instead be lightly drizzled unless requested by the customer.

  • TRINITY: What sauce did you want? STACY: Spicy mayo please.

  • TRINITY: Next, onto the toppings. The portions for the toppings have the same concept as the protein, slightly over the rim, not overflowing, but definitely not under for each scoop. For the toppings with the tongs, the portion should be within the size of the portion cup, like this.

  • TRINITY: Alright, now go ahead and add toppings to your bowl.
