Mofongo is a vegetable and spices based dish that can be served as a side dish or main course. Is made with the combination of fried green plantains, chicharron (fried pork skin), garlic as its main seasoning and olive oil and is served in a wooden pilon and paired with a protein like fried pork, chicken, beef or shrimp, as a topping or filling.
The Spaniards brought slaves from West Africa to Puerto Rico.
Those slaves introduced "Fufu" to the Caribbean, a plantain based dish.
The populations of this countries called ¨Tainos¨ adapted Fufu with their own local ingredients resulting in Mofongo.
In order cook Mofongo we will need: green plantain, olive oil, garlic cloves, fried pork skin and chicken stock

The plantains are peeled and fried. All these ingredients are mashed in a pilon (wooden mortar) and then shaped into a ball and is served with chicken broth to keep it moist.
