  • Altars are created wth photos, mementos, fruit, bread, and other favorite things of the ancestors being welcomed and honored.
  • These altars also give the opportunity to teach children about those who came before them.
  • I make an altar for my father every year and tell my daughters about the grandfather they did not get to meet. As one of his favorite foods that he much enjoyed I prepare Ceviche in his honor.
  • Ceviche: Seafood dish typically made from fresh raw fish or shrimp cured in citrus juices, such as lemon or lime, and spiced with seasonings.
  • By the way, ceviche originated in Peru! There are 11 types of ceviche, but today I am going to share with you only the basic shrimp ceviche that my father liked.
  • Ingredients: 12oz cooked and peeled salad shrimp, 2 lb. bag of frozen broccoli, 5 tomatoes, 1 small white onion, 2 jalapenos, cilantro as desired, avocado as desired, 5 medium sized limes, and salt to the taste.
