well, they encode text in a binary form since they recognize binary text, then converting each character into a binary code,common text encoding includes ASCII and unicode
however, digital images are encoded in binary text ,the people make connections between the amount of data used by the computer to store ,transmit and create an image and the file size of different images

and, audio encoding involves sampling of the analog signal per given time, holding the sampled value,comparing it to a certain threshold voltage. the sampled voltage are then converted to binary values
