The top shelf consists of fruits, vegetables, legumes, grains, and other foods that will be hot held for service.(cooked at 135^F (57^C)
Welcome to the walk-in fridge!In here, you will find every food that you may find in your regular kitchen. Starting from the vegetables all the way to poultry.
On the third shelf is the roasting rack. Where roasted or par-cooked food is stored. May include roasts of beef, veal, and lamb. (cooked at 145^F (63^C for 4 seconds)
The fourth shelf consists of seafood. Which includes: fish, shellfish, and crustaceans. (cooked at 145^F (63^C for 15 seconds)
The second to last shelf consists of ground meat or chopped and minced ground seafood. Which includes beef, pork, ham, etc. (cooked at 155^F (68^C for 15 seconds)
The last shelf consists of the poultry section. Which includes whole ground chicken, turkey, or duck. **(ALL RAW INGREDIENTS)** (cooked at 165^F (74^C for 15 seconds)
