  • Professor:Some of us are allergic to cats. (Professor Egghead doesn't like cats. He sneezes.)

  • Professor:Others, dogs.(Professor Egghead doesn't like dogs. His ex has one. More on that later)

  • Professor: Still others are allergic to pollen, or to plants like poison ivy, poison oak, and poison sumac. The list goes on. Milk, eggs, gluten, latex.

  • Professor: ...Me, I'm allergic to all of this. I'm allergic to my ex-spouse, too. (pause) I think she was trying to tell me something the day she brought home a cat and emptied the vacuum canister over my head.

  • Other allergies are more serious. For example, bee stings. They're much more than an irritants. They can be dangerous. The immune system over-reacts to the bee's. Then all sorts of bad things start to happen.

  • Your blood vessels dilate and become porous. This causes hives, and a rash, and a drop in blood pressure. Your throat begins to swell shut up. It's bad. It's anaphylaxis. In our world, anaphylaxis can be triggered by the residue of a peanut or tree nut.

  • Anaphylaxis is a Greek word with two parts: Ana - which means again or too much, and phylaxis, which means protection. Anaphylaxis is the immune system's overreaction to the threat posed by an allergen. In our case, peanuts or tree nuts.

  • Same holds true when someone who's allergic to shellfish or just plain old fish eats, touches, or smell fish. The body's immune system overreacts.

  • In our world, peanuts and tree nuts pose a significant risk to our allergic customers. If we don't adhere to certain standards during production, processing, and in the clean areas, a customer can develop anaphylactic shock.

  • If we don't follow these standards, the results can be pretty bad. Much worse than my allergic reactions to cats or dogs, or to pollen or plants, or to my discovering my wife ran off with a Martian.

  • Not following the peanut and tree nut transfer-prevention practices shown later in this course can lead to anaphylactic shock in our customers. Anaphylactic shock doesn't look like this.
  • It looks like this. Anaphylactic allergy reactions lead to 30,000 e.r. visits, 2,000 hospitalizations, and 150 deaths annually in the U.S. Let's help prevent that.
