Storyboard Text

  • Dad, we need to start packing for our camping trip!
  • Sarah, don't worry! We can do that tonight. It won't take us long.
  • Is that all we're bringing? It doesn't seem like much.
  • We don't have room for anything else. True campers pack the lightest packs they can.
  • The Next Day
  • Steak on our first night- what a treat!
  • They sure look good don't they?
  • 9 p.m.
  • I'm going to go get us some water. This steak is so salty.
  • This will be perfect water. No algae in sight.
  • I think you should wait and see if you're still not feeling well later tonight.
  • 3 p.m.
  • Now for the best part of camping- S'more time!
  • Thanks for the water Dad. This is great. Can't wait for tomorrow!
  • What's for breakfast? It's our last day here, it has to be a good one!
  • 3 Days Later
  • I have a great breakfast planned. We have some bacon left and I am going to dice some potatoes!
  • That was such a relaxing trip Sarah! I can't believe I have to go back to work tomorrow.
  • Well, we ate a lot of dehydrated food. But, for supper on the first night we had steak. We had pasta one night. We ate oatmeal most mornings and we had bacon and potatoes on our last morning. We didn't drink anything other than water.
  • How long was your trip?How were the foods kept cold?What was the source of the water you drank? Was it filtered or boiled?Was a meat thermometer used?
  • Our trip was 4 days total. The food was kept in a cooler that we brought, however it was 29 degrees almost everyday and I am not sure how cold the food stayed. My dad got the water from a nearby lake. We didn't use a filter or boil the water. My Dad didn't bring a meat thermometer.

  • I do not feel very well. I think I'm going to go to the doctor this afternoon.
  • Hi Sarah, what brings you in today?
  • Well, I recently got back from a camping trip with my father. When I woke up the morning after our return, I had really bad abdominal pains and diarrhea. 
  • Okay. I am going to ask you a few questions about your trip. Can you describe where you were camping?
  • We were in Algonquin Park.
  • Can you describe what you ate and drank on this trip?
  • Okay, I am going to order some tests. In the meantime, I am going to write down some of the mistakes you and your Dad made. 
  • Don’t make the same mistakes Sarah and her father made. Practice safe food handling.Even if it means packing a little heavier.

  • Mistakes Made While Camping:#1- Cooking Meat without a Meat Thermometer- Could have led to infection with E.coli O157:H7, Salmonella bacteria.#2- Drinking Water From a Lake Without Filtering or Boiling it. -Could have been infected with Vibrio cholerae, Campylobacter, Shigella, Yersinia or E.Coli O157:057 bacteria.#3- Eating Food That Was Not Refrigerated Below 4°C-Could have led to infection with Salmonella or Clostridium perfingens bacteria.

  • Next time... #1- A meat thermometer should be brought camping to ensure that meat is cooked to the proper internal temperature. #2- Water should either be filtered or brought to a rolling boil. #3- Food that needs to be refrigerated should be consumed on the first day of camping. The bacon you cooked on the last day should not have been consumed, as it was not kept at a temperature less than 4°C.

  • Unfortunately, these mistakes are very common.I am glad you came in as soon as you were feeling ill. I will give you a call when I get your test results back.

  • I got a call from Dr.Wilson today. Here's what she said. #1- I have an E.coli infection and that the likely source was uncooked beef or the water we drank. #2- My symptoms will last for 5 to 10 days. #3- If my symptoms get worse I should go to the hospital to get IV treatment. #4- You should monitor for symptoms because these symptoms show up anywhere from 1 to 10 days after infection.

  • Well I sure learned my lesson.Packing too lightly came with a price.
